Chop'd, a gourmet salad bar based in London, is in the process of opening two new stores in the capital; bringing its total portfolio to eight.

The first of which opened on Saturday 3 December in Box Park, the pop-up mall in Shoreditch, east London. The second will open in Paternoster Square in January 2012.

Originally opened in 2004, Chop’d is a gourmet salad bar concept that offers a range of healthy meals from balanced salads, soups and stews, to sushi, wraps and meze.

“We are an active lender in this space, and are willing to consider cash flow lending to strong management teams with a proven track record,” said Stephen Cherry, Relationship Director in Barclays Corporate’s Hospitality and Leisure team.

“Chop’d’s management team spotted a gap in the competitive food and drink market, and it is now a staple for many of the City’s lunchtime crowd. The fact that the business is going from strength to strength and expanding at a time when the threat of a double-dip recession looms on the horizon is testament to their success.”

“Over the years Chop’d has remained true to the original values of providing locally sourced, quality food for people looking for tasty, healthy meals and we have invested in training and development,” added Eddie Holmes, Managing Director of Chop’d. “As a result we have seen considerable sales growth over the past 18 months and are investigating new strategic locations to expand the company further.
